Ingredients
  • 1cup millet
  • 4cup filtered water
  • 1/2cup almond drink, or spelt, or riceoptional
  • 1/2 lemon (zest and juice)
  • 1stick cinnamon
  • 1pinch sea salt
  • 100g walnuts
  • cinnamon powder
Instructions
  1. Wash the millet by rubbing it vigorously between your hands, under water.
  2. Throw the washing water and place the millet in a pot, along with 4 cups of filtered water. When boiling, put the fire in the minimum and let it cook for 15 to 20 minutes. In the last 5 minutes you might need to stir so that the millet does not stick to the pan.
  3. Wash the apples and, in case its organic and have no wax to cover the skin, keep the peel and cut them into thin strips in half moons.
  4. In another pot put a little water (just enough to cover the bottom), the lemon juice and a pinch of salt. Add the apples and turn the fire on, with low flame and with the pan open. The idea is that the apple release its water and then reduce, increasing the intensity of its sweetness. Turn the fire off when the apple has no liquid and is cooked (some 4min).
  5. Whenever the millet is already cooked, add in the lemon zest and vegetable drink. Vegetable drink is added just to give greater creaminess.
  6. Serve it as shown…millet in the bottom and apple, walnuts and cinnamon powder on top.
Recipe Notes

I like to eat this porridge any time… as breakfast, snack or dessert. If serving as dessert, I advise you to add some rice syrup on the apple to make it sweeter.

If you want a diferent version of this same porridge, you can blend the millet and have a kind of puree.
