Granola
Hello all…I know it’s Easter and probably the recipe of something very sweet with chocolate would thrill you more! The thing is that last weekend I had this challenge of cooking everything with chocolate so now I can’t even think of it! 😉 Anyway I’ll share with you the recipe of this crispy granola! 🙂

- 500 g oats
- 150 g sesame seeds
- 100 g almonds
- 50 g walnuts
- 50 g raisins
- 2 tbsp cinnamon powder
- 4 tbsp coconut oil
- 80 g rice syrup
- 1 tbsp vanilla extract
- zest of 1/2 lemmon

- Cut the walnuts and almonds and preheat the oven at 170ºC.
- In a large bowl add almonds, sesame seeds, oat flakes, and cinnamon.
- Soften the coconut oil and add it to the remaining ingredients, along with the rice syrup and the vanilla extract. Wrap it up for a few minutes.
- Add the lemon zest and stir for a while.
- Put it in a tray lined with parchment paper and bake for about 15 minutes or until golden brown.
- Remove from the oven and let it cool. Then add the raisins and walnuts (you can also put it in the oven, but you'll have to watch over it because it burns easily).

It is important that you let granola to cool before you stir it, to ensure you get those delicious crunchy clusters! 🙂 ... and in fact, if you want it with chocolate flavor, just replace cinnamon, add raw cocoa powder instead and increase the quantity of rice syrup as cocoa is a bit bitter.
My advice is that you vary your creations. You can put hazelnuts, cashews, sunflower seeds, pumpkin seeds ... experiment with coconut, prunes, dried red fruits, essencial oils... be creative and allow yourself to be guided by the smells and flavors that seduce you most! 🙂
